Making a healthy breakfast today to get my Cowboys ready to head up in them there hills. We get to lay down fence. The cattle are all home and off of the mountain. It makes it safer for the deer and elk to move around with out getting all tangled up. Snow will come soon so this just may be our last adventure up on the Fish Lake.
Pumpkin Pancakes
1/4 cup pumpkin purée
1 egg, 1C milk, 1 C flour or more depending on how thick you like your pancakes...
1tb sugar or agave, 2tsp baking powder, pinch of nutmeg and 2 drops Protective blend and a drop or two cinnamon Doterra essential oils
Whisk egg and pumpkin and add the rest. Fry them in your cast iron skillet for a tasty fall breakfast treat.
* be sure to locate cast iron skillet ahead of time just in case The Husband has left it in his pack saddle, this may take some time and it's chilly outside in November.
You can always make your own pumpkin purée from those leftover Halloween pumpkins if you are crafty like that and the neighbor kids didn't manage to steal them off the porch for the annual pumpkin smashing down Main Street.
